In my opinion it's popularity comes from its multilayered approach. It touches upon a lot of anime tropes (比喩) that are instantly reconizable, and yet it manages to tweek (つまむ) everything just enough to make it unique and memorable. Such tropes include:

- Giant robots/giant monsters.

- Giant robots fighting giant monsters.

- A large cast of characters and character types.

- Teen love dramas and love triangles.

- Kids piloting/controlling giant robots.

- Huge amounts of merchandizing opportunities, including toys and plastic model kits.

- Fan service (T n' A and action scenes, each in their proper dose).

Now, add in themes and concepts that were truly novel and original for anime at the time:

- The robots turned out not to be robots, but living creatures centrally tied to the plot of the series. (this broke new ground not only in concept but in the meta-narrative of anime; both honoring and tying together the era of Super Robot design [i.e. Mazinger Z] and the era of Real Robot design [i.e. Gundam])

- Kids forced to deal with heavy subject matter that truly affects them psychologically, guided by adults who have barely come to grips with similar things in their own lives (a true plethora of borderline dysfunctionality).

- Displays of people being selfish, egotistical, withdrawn, callous and uncaring.

- Displays of deep, crippling depression (they literally created a new anime trope here).

- Clever world building (the setting seems so fantastical and wacky in a Japanese Super Robot sort of way, but everything we see has a clever, well thought out purpose for being within the world of the story. It isn't just there for the sake of looking cool).

- A complete deconstruction of the aformentioned anime tropes (much in the way Frank Miller and Alan Moore deconstructed American comics and their tropes in "The Dark Knight Returns" and "The Watchmen").

- An unrelenting look at who the characters are, how they got that way, their interactions with one another and how they'd really react to the events of the series, particularly to the insanity of the unraveling of the world around them. (Shinji is cringe-worthy sometimes, but can you blame him for being that way? Are Gendo, Misato or Ritsuko any better?)

Layering all these things together gives the series many hooks by which it can attract a large swath of potential fans. The genius of this, in my opinion, is that it gives them something they want but also exposes them to so much more that's interesting and worthy of consideration:

- Like action? Good, we've got it, but why don't you stay for the human drama?

- Like silly love triangles and sexy innuendo? It's here, but also check out the deeply personal stories of the characters that illustrate the reasons why they flirt with and tease each other?

- Like cool looking toys/model kits? Well...keep buying them so we can make lots of cash off of the molds by repeating designs that differ slightly from toy/kit to toy/kit (but hey, how else would you get EVA-02 on your shelf?).

Add all of this up and you've got something that attract fans who can find something in it they love and keep them coming back for more. (myself included).
